| I know there are some fuckers here that like to eat With all this health talk and the New Year - just curious if anyone had any special dishes they make during this season? Especially any of you hunters out there? Here is my winter favorite - super easy to make and good for you. Taco Soup / Chilli In a big pot throw in the following (don't drain / strain any cans): 1 can corn 1 can kidney beans 1 can black beans 1 can red beans 1 can stewed tomatoes 1 can mexican tomatoes (ro tel makes some great variations that include peppers) 1 cup of taco seasoning (2 cups if you really like spicy food) 2 tablespoons powdered ranch mix mix well, cover and simmer on low heat meanwhile In a pan cook 1 to 2lbs of your favorite meat (lean ground beef, sirloin, venison, etc.) drain off all fat and mix into the pot keep covered on low heat to simmer for an hour then slightly uncover (tip the lid) and keep simmering for one to two more hours (simmer longer for thicker chili like consistancy) - stir every 30 minutes garnish with shredded cheese and/or sour cream super hearty gut fill'n and good for you - the "hunter's variation" of this is to marinade meat in tall can of guiness, cook, and simmer in guiness then do not strain and pour everything into the pot this makes 10 to 16 servings | |

| Man that sounds good. I am going to try this one. I am now hungry . In the summer i make redneck turtle burgers, everyone looks at them funny but they all love them. The first time i made them with ground beef they are good but too greasy for me so now I make them out of ground turkey. | Big hit with the kids did them for a 4 th of July party. When you pull them out of the oven people freak out if they didn"t see you make them, thinking they are real turtles. | |

| We have a tradition in my house, we make chili stack. Start off with a heaping pot of ur favorite chili. Serve chili over white rice with all the toppings: shredded cheese, lettuce, onion, tomatoes, salsa, crushed Doritos, sour cream. Kind of a twist on just chili. Goes perfect with football and beer on a cold Sunday afternoon | |

Speaking of crazy greasy creations - They have this "sandwich" at a local pub here called the "heart attack something or other". Its a Philly cheese steak with like a lb. of bacon (minced up with the steak) topped with fresh fried onion rings..... wrapped in a huge flour tortilla and deep fried golden brown like a 18" long giant egg roll of doom! haha it's spectacular! | |

Green Chile Pork Stew
INGREDIENTS
4 pounds country style pork ribs, cut into cubed 1 ½ pounds roasted New Mexico green chiles, skins removed and chopped 2 pounds roasted tomatillos, chopped 2 white onions, medium-sized, chopped 2 lbs red potatoes, cut into cubes 2 small cans (drained) white hominy 12 cloves garlic, chopped 1 teaspoon dried oregano 2 tablespoons cumin 1 tablespoon dried New Mexico green chile powder 4 cups chicken broth (I used some of my homemade stock from my leftover turkey bones) 3 bay leaves neutral flavored oil salt to taste cilantro, fresh, chopped coarsely lime, quartered
Chop chiles, onions, garlic, tomatillos, potatoes, and cilantro. Brown pork in oil. Remove. Sauté onions on medium heat, adding garlic and green chiles when onion is mostly cooked. Combine meat, onions, garlic, green chiles, potatoes, and hominy into crock pot/or stock pot on stove. Add chicken broth, bay leaves, tomatillos, oregano, green chile powder, and cumin. Cover and simmer. Check seasoning and adjust it and consistency as desired. Before serving remove bay leaves and serve chopped cilantro and lime to add as desired.

| The only addition I can make to this is the Bacon Wrapped Mac'n'Cheese Stuffed Meatloaf.
Mac'n'Cheese: 1C elbow shaped noodles 1/4lb Velveeta-cubed 1/4C milk 2T butter
Cook the noodles according to package directions. Drain. Stir in the Velveeta, milk and butter. Keep on low and stir occasionally until cheese is completely melted. If it seems to thick add a bit more milk. Remove from heat and set aside.
Meatloaf: 1lb ground beef 1Tbsp chili powder 1tsp garlic powder 1/4tsp cayenne pepper 1 egg 1/2 sleeve Saltine crackers - crushed 1/4C milk
Mix all ingredients together in a large bowl. Set aside.
Topping: 6 strips of bacon 1C ketchup 1/4C mustard 1Tbsp Worcestershire 1Tbsp brown sugar
Preheat oven to 325*. Line a loaf pan with foil. Place half of the meat mixture in the pan and press down and up the sides creating a well in the middle. Add your mac'n'cheese to well. Place the rest of the meat mixture on top, sealing the sides. Line a sheet pan with foil. Place the sheet pan on top of the loaf pan, flip over, transferring the meatloaf to the sheet pan. Discard foil from loaf pan. Perfect the form of your loaf and make sure the sides are sealed well so no noodles escape! Place the bacon on top in a basket weave formation and tuck the ends under the loaf. Bake in the oven for 30 minutes.
Mix together the ketchup, mustard, Worcestershire and brown sugar. Remove the meatloaf from the oven. Pour sauce over top. Turn oven to *375 and bake for 15-20 more minutes, or until sauce is bubbly and meatloaf is cooked through. Remove from oven and let rest 10 minutes before slicing.
It's both delicious and filling. | |
